It was during this period that French pastry chef Henri Le Roux, the mastermind behind Maison Le Roux in Brittany, began experimenting with caramel. First in the form of a salted butter caramel alongside crushed nuts, Le Roux transformed the classic caramel into something entirely unique and unforgettable. By the 1990s, the salted caramel frenzy was spreading across the world.
